What Everett Eats V.4

It's been quite a while since my last "What Everett Eats" post, but I've been doing a little better lately at remembering to snap a quick photo before he destroys his plate. I gave him a little bit of Quinoa the other night with cooked broccoli and to my surprise he devoured it. I will definitely be making it again sometime soon!
Breakfast: Toast w' almond butter, cranberries, and mixed fruit

Snack: Green Smoothie

Lunch: Natural cheese puffs, and turkey dogs w/ catsup 

Orange half, cottage cheese, and eggs w/ salsa

Dinner: Grilled chicken, sweet potatoes and yams, cottage cheese salad( w/ tomatoes, avocado, and green onions) quinoa w/ broccoli 

Breakfast: Oatmeal. peaches, and cranberries

Dinner: sugar snap peas, corn tortilla with cheese, cabbage and yogurt cilantro topping

Dinner: Easy Thai noodles with cilantro, green onions, carrots, and raw peanuts

What Everett Eats III

We had A LOT of avocado this week! I've heard a few people say how they don't like eating/feeding their child avocado because it's fattening. I really don't know where this theory came from, but if it's true I'm sure you could only get fat off of it from eating a LOT just like any other food. Avocados do have fat oils but it definitely doesn't mean you're gonna get "fat" from eating them! I like feeding Everett avocados because it's an excellent way to give him some protein without feeding him meat AND has a ton of amazing vitamins in them! Some other sources of protein I give him are eggs, (which he devours with a little bit of salsa) and almond butter. I haven't been giving him peanut butter because all of ours has sugar in it. I bought an assortment of individual squeeze packs of Justin's Almond Butter which is sweetened with with things like honey and pure maple syrup. Don't worry though, I'm not a freak mom. He defiantly still has his share of processed sweets! Mostly courtesy of his Dada!

Dinner: Easy Mexican Pizza

Lunch: Pita sandwich and cheese sticks

Dinner: Turkey dogs, rice dish, pretzels

Breakfast: Grapefruit, Orange, avocado, whole wheat toast




Lunch: Pickle, avocado, corn chips, cucumber and tomato salad

Lunch: Cilantro quesadilla, with salsa and avocado 

Breakfast: Pears, Whole wheat toast with almond butter

What Everett Eats V.2

Everett goes through so many stages of liking things and not liking other things. He'll eat a lot of weird veggies and then not touch some other things and then change his mind about them a couple months later. I'm sure this is pretty normal, but sometimes I can't wait for him to be able to talk and tell me exactly what he likes and doesn't like!
One dish that I'm very happy with is a super easy tomato basil cucumber salad (fourth picture down). This kid will eat bowls of this stuff, and I like it too! The recipe is posted at the bottom.

Lunch: Hummus, Crackers, and Swiss Chard

Lunch: Cheese, crackers, baby tomatoes, and asparagus

Dinner: Peas & Carrots, Turkey, and oyster crackers

Dinner: Vegetarian baked beans, cheese crackers, and tomato basil cucumber salad

Breakfast: Agave sweetened granolla with naturally sweetened yogurt, strawberries, and blueberries


Tomato Basil Cucumber Salad
  • One cucumber, diced
  • Four or five Roma tomatoes, diced
  • 1/4 cup of white vinegar
  • 1/3 cup of olive oil
  • One Table spoon of dried basil 
  • Salt and Pepper to taste
Combine everything into a large container and let marinade until you need it.
These are just estimated amounts so just experiment with what you like and make it your own like sometimes I add banana peppers or onions.

What Everett Eats

A few people have asked me what kind of foods I feed Everett. It's pretty difficult to grab and make something easy and nutritious for your toddler during a busy day. I like discovering new meals for him that are easy to fix, easy for him to eat, and also good for him. Here are a few of his meals from this last week.

Lunch: Pumpernickel Rye, Mayo, Mustered, Tuna, and diced pickles

Snack: Mandrin Oranges and Rasins

Breakfast: Bagel with Butter, Rasberries, and Blueberries

Dinner: Cooked Veggies, Turkey Dog w/ Catsup, and Cottage Cheese

Dinner: Turkey, Cheese, and Pears

Lunch: Asparagus, Pretzels, and Apricots w/ Maple Yogurt.
