Clean Eating Continued...

It's crazy how much we take for granted of all the great food we get to eat on a daily basis. You never realize how great you eat until you can't have some of the same foods you used to. My cousin, aunt, and grandma are doing a month long fast where you can choose 7 foods to eat the entire month. They aren't doing it for health reasons, or to loose weight or anything, it's more to just make yourself aware of how great we have it compared to many people in the world and help simplify your life. The next month they're moving on to clothing and so on. I haven't read the book yet, but it sounds super inspiring. My cousin did a little post about it here.
Anyway, it all just got me thinking about how much we really take for granted. I should be delighted because how I'm eating is not only way more of a variety than most people in the world get, but also great for me compared to our Americanized diets. I'm really impressed that some of my family is doing the seven foods challenge and I hope they can keep motivated throughout the rest of the month and learn a lot from their experiences.
On to my meals from the last few days. This is my fourth day, and I feel SO great!  I hope these give you a few ideas for clean eating and a little motivation. If you'd like to talk about anything please feel free, I'd love to hear from you! xo -Liz

Day 1
Breakfast: Oatmeal with cinnamon
Lunch: Quinoa noodles with tomato sauce, tomatoes and seasonings
Dinner: I made these baked sweet potato fries with mustered. Yes, that was my dinner they were that good! (P.S. I replaced the taco seasoning with cumin, pepper, salt, chili powder, onion powder, and garlic powder.)

Day 2
Breakfast: Green juice
Lunch: Hummus with lots of veggies and raw macadamia nuts
Dinner: Elk burger without the bun (Ezekiel bread optional)

Day 3
Breakfast: eggs with salsa
Lunch: Left overs from this delicious soup I made the other day.
Dinner: Eggplant parm (without cheese) made with ezekiel bread crumbs and tomato sauce with italian seasonings (I didn't have any sugarless sauce on hand) and yummy grilled asparagus.

Day 4
Breakfast: Omelet with grilled veggies
Lunch: Beans with a side of avocado and cholula hot sauce
